July and August always feel like lavender season and as a friend is gifting me lovely sprigs of purple when I leave her house weekly, it inspired me to do a couple of things on the theme.
First and yummiest… lavender in baked goods are simply divine! If you haven’t tried this out, I’m putting a favourite recipe below. Lavender makes an amazing gently floral addition to anything chocolate, vanilla, sweet or fruity, but all you need is a hint of it – a teaspoon or two in a full cake recipe, or just sprinkle it on top. Give it a try, you’ll love the outcome!

Lavender Sugar Cookies
(This recipe has Canadian origins, so get out your measuring cups and spoons!)
1 1/2 cups flour
1 1/2 tsp baking powder
1/4 tsp salt
1/2 cup butter or margarine
1/2 cup sugar
1 egg yolk slightly beaten
3 tbsp milk
1/2 tsp almond extract or vanilla
1 tsp lavender flowers
Stir flours, baking powder and salt together. Cream butter. Add sugar gradually, beating well between additions. Add egg yolk; mix well. Add dry ingredients alternately with milk. Add vanilla and lavender. Chill dough thoroughly. Roll 1/4″ thick on lightly floured board. Cut. Bake on uncreased cookie sheet at 375 degrees F (or 175 C) fo 8-10 minutes. Watch carefully.
*note: recipe works amazingly with cookie cutters – or simply roll into a ball and flatten as seen below.
